Roasted Red Potatoes

I don’t know what magical farm my CSA gets its produce from, but I gather from prior cooking experiences that most red potatoes are not, in fact, red on the inside.  Rather, a peeled red potato usually looks the same as a white potato. 

Unfortunately, that rather drastically limited my options.  Bright red mashed potatoes?  Good luck getting my fiance to eat those.  Pink potato soup?  Not so much.

And honestly, what better way to serve gorgeous, fresh potatoes than to prepare them as simply as possible?  Garlic, salt, pepper, olive oil, an hour in the oven, and we had an easy, colorful side dish that we both loved.

I promise, at some point on this blog, I will do something with a root vegetable other than roasting it.  In fact, I have a few recipes coming up that will be totally different, substantially less healthy and just as delicious.  But for now, if you find yourself with some brightly colored potatoes, please don’t make soup.  Try this [...]

There’s a reason I haven’t written a post about risotto yet. It’s a good reason — logical, persuasive, and hard to argue against. The fact is, as much as I love to photograph food, I seem to be unable to take an appealing photo of risotto.

Cooking Great Food with a Deep Fryer

Deep-frying is something that a lot of people have never tried and instead have left to the fast food outlets and restaurants. Deep-frying is actually quite easy though, when you know how it is done, and a deep fryer is the cleanest, safest way of deep-frying your food.

Pour the oil into the deep fryer, keeping it well below the indicated max fill line. If there is no max fill line, check the instructions. You will need enough oil so your food is immersed but do not fill it right up because your food will displace some of the oil.

Using the right temperature oil means the food does not absorb much oil. If the oil is too cool, the food will come out soggy. If it is too hot, the food will burn on the outside before the inside is done.

Add the food carefully, using a slotted spoon or tongs if your fryer does not have a basket. Do not overcrowd the fryer or the food will absorb too much oil. The food cooks quickly so you can deep fry in batches and the cooked food stays hot.
